Tucked away in the old historic town of Solomon, 4 miles east of Safford, this little out-of-the-way place serves the most delicious Mexican food around! Family owned and operated for over 34 years, the original structure dates back over 100 years!
Our purpose each day is making Mexican food — original recipes, the old-fashioned way with only the best natural ingredients. Margaritas, frozen and on the rocks, are part of the bill of fare at this unpretentious restaurant.
Solomon was original county seat and one of the earliest settlements in the Gila Valley. Solomon was settled in 1876 by Jewish settlers from Pennsylvania.

6 eggs (separate yolks and whites)
12 green Chile peppers roasted, skinned, slit lengthwise on one side and seeded
1 cup flour
12 oz. cheddar cheese cut into 1-inch thick strips
Enough safflower oil to fill a deep fryer halfway
Stuff each Chile pepper with 2 strips of cheddar cheese and set aside. Start heating oil to frying temperature. Whip egg whites until they meringue. Beat egg yolks and fold into the meringue. Drop a stuffed green Chile in deep bowl filled with flour and bury completely. Dip the flour-coated Chile in the meringue batter and completely coat. Carefully place the battered Chile pepper into the deep fryer and fry until golden brown. Drain on paper towels and serve.
