They're made fresh, and they go so quickly so they're often hot. There are no preservatives, which could change the taste. They are simply white corn or flour and lard or vegetable shortening. Sorry, no cutting the calories with these tortillas. It's the reason they taste so good. A great tortilla makes a meal that much better.

Manuel Bertoldo bought the tortilla factory in spring of 1990 and has been running it ever since.

"They're very similar to what was made in the old days at home," Manuel Bertoldo says. "As soon as you put preservatives in, you ruin the tortillas." One customer who swore he would only eat his wife's tortillas now only eats Mi Casa's.
