Put Grandma's secret recipe to the test at the second annual Salsa
Challenge. Entering is easy but space is limited to 25 teams. Join in
the fun - you will have a space under the Salsa tent to compete for
great prizes and bragging rights for the top awards. Prizes will be
awarded for the best salsa and for the best booth and/or
costumes. Remember, SPIRIT counts so get ready for a memorable
day on the Safford City Square.
Salsa Preparation and Competition Rules:

All ingredients must be mixed together on site at the event. Canned ingredients are acceptable
including tomatoes, tomato sauce, chilies, onions, garlic, salt, lime and various spices.
EuroFresh Farmsc will be providing fresh tomatoes for each contestant to use in the Salsa
Challenge. All food supplies must be purchased from an approved source, i.e. grocery store.
Please bring proof of purchase. No home grown or prepared. There shall be no eating, drinking
or smoking in the food preparation area. Hand washing stations will be on site, accessible and
set up for contestants use. There will also be a separate washing station for cooking utensils
and equipment. Bare hand contact with ready to eat foods is not permitted. Each contestant
must prepare a minimum of 2 gallons of salsa with one pint set aside for judging (a container
will be provided). There will be a mandatory chefs meeting at 8:30 a.m., Public tasting will
begin at Noon. Judging will begin at 11:00 a.m., your salsa will be Judged based on aroma,
consistency, appropriate heat level, color, taste and after-taste. Participants must bring ice
chests with ice to keep your salsa refrigerated.

Upon acceptance you will be notified by mail of festival information:
i.e., judging times, award times, booth placement, check-in andparking arrangements.

Check-in at the salsa tasting venue no later than 8:30 am on Saturday, September 27th, 2008
to get your table space and begin your setup. There will be a mandatory chefs meeting at 9:00
a.m. Salsa Judging will begin at 11 a.m.

SALSA MAKER MUST PROVIDE:
-Salsa (prepare approximately 2 gallons of salsa)
-Container to transport salsa
-Bowl and scoop for serving
-Hat, visor or umbrella to shade yourself from the sun
-Table decorations/theme are optional, but fun!
-Extension cord (s)

Set-up:

Each entrant will share a table with another entrant (tables will be provided by the Festival).
At 11 a.m., the official judges will walk through and taste each salsa, then cast their votes in
each division. The public will walk through between 11:00 a.m. and 1 p.m. tasting each salsa,
then cast a vote for their favorite in each division, including their favorite (People's Choice).
Winners will be announced and awards presented on the Main Stage at 4 p.m., once the votes
are tabulated. The event will provide the tables, chips and plastic tasting spoons

Contestant Check-in: 8:00-8:30 a.m.
Official Tasting by Judges: 11 a.m.
Salsa Tasting by Public:11:00 a.m.-1 p.m.

In order for the public to partake in the Judging, Salsa Tasting is $4, which includes unlimited
tortilla chips, 10 salsa tasting tickets, and 1 Judging Form. Fill out the Judging Form and return
before you exit the tent in order for the votes to be counted.


Amateur Division-Entry Fee: $20
This is an amateur division comprised of community members. The entry fee includes a Arizona
Salsa Trail hat.

Amateur Division Prizes:











Professional Division—
Entry Fee: $40
This division is comprised of commercial contestants, restaurants, or companies who sell
a salsa product to the public. All participants must have food handling certificates. Entry
fee includes a special Salsa Trail Apron. No prize money is awarded in this division,
contestants compete for a traveling trophy and bragging rights.
